I have heard this before, but I cannot figure out how sodium sulfite changes the "power "of the developer? Why do you think this chemical affects the activity of the developer?

Sodium sulfite is an oxygen scavenger, a slight silver solvent, and a buffering compound; but it has no effect on the "power " of the developer.

The chemical activity of a developer is determined by the accelerator type, amount of HQ, and total alkalinity.

a mild sodium sulfite solution with FG-7 will bring out more shadow detail
in old plus-x, try it and have fun!
